Day 032 – Convection Oven Part II

Yup.  Another experiment with the convection oven.  This time CHICKEN.

Since we gave up on the cabbage soup diet, I thought I would make the chicken that was sitting in the freezer.  I took it out in the morning but still sort of stiff by the time I was going to roast it.  I nuked it slightly in the microwave and it seemed fine.

I figured I would do the same thing as the roast beef and jacked up the temperature 450F at the beginning for a bit then follow “Bubbamom” at Chef Talk’s advice.

I used the recipe that I found for Cornish Hen and used it on the chicken.  Stuffed lemon, rosemary, and I added garlic in the chicken.  Rubbed olive oil on the skin then salt and pepper.

Roast it at 450F for 10minutes then turned it down to 350F with convection to roast it.  It only cut the time down by 30mins but it seemed to be healthier judging from what’s left in the broiler pan.  Also my husband seemed to like the skin of the chicken more as well as it’s more crispier (not sure it’s from rubbing olive oil on or from the convection oven) .

I was glad that it turned out good.  Along with baked potatoes, we had a pretty good dinner except I should have added some vegetables.

I guess we will just have to wait till the new year to start loosing weight.
