Day 107 – Lasagna Recipe from a goverment website??

Totally exhausted.  Didn’t get home till late last night after our friend’s birthday dinner party and loosing one hour sleep cause of day light saving time was definitely a deadly combination.

My in laws were coming for lunch today and I had absolutely no idea what to prepare.  Didn’t go shopping yesterday and got nothing much left in the fridge.  Good thing I had ordered up some special fried rice and the Hungarian paprika chicken from my mother in-law.  The only thing I had to really worry about was the vegetarian brother in law.  Since I bought some whole wheat lasagna noodle a little while a go, I figured I might try to attempt a vegetarian lasagna.  I know he likes mushroom and he likes spinach so I search on the internet for a spinach and mushroom lasagna recipe.  Turned out I found one on the government website – Eat Right Ontario.  Here is the recipe.  Looks super simple.

I picked up my mom as usual, went to the groceries store, picked up some mushroom, cheese, and pasta sauce, dropped my mom off at church and got home to prep the lasagna.  All that took me 45mins.  phew.. good thing I still have enough time to make the lasagna.  I quickly whip everything together according to the recipe and throw it in the oven.

I altered the recipe a bit. Used Ragu’s pasta sauce instead of tomato sauce.  And the Tex-Mex mix cheese instead of Mozzarella cheese on top.

Good thing they were all a little bit late so the lasagna was just ready in time for lunch.  It turned out pretty good.  Everybody seemed to have enjoyed it.  It could use a bit of garlic and a bit of salt I think.

Now I need a nap just to make up for last night’s lack of sleep.  Hopefully I will adjust to this new time change soon.  Tomorrow is going to be rough.
